I came up with this taco recipe because of my kids. They love having tacos for dinner but I always avoided it because they would make a huge mess trying to eat them, and get frustrated when the shells cracked and fell apart. These little taco bites are easy to eat and they assemble them all on their own as well. I just put all the fixings in the middle of the table and they spoon on whatever toppings they wish. These also make great appetizers, and if you follow my directions and use a 7 layer dip rather than individual toppings it makes it much easier to assemble fully loaded tacos in very short order.
You will need
Scoop shaped corn chips
1lb ground beef
7 layer dip (or if you prefer to separate ingredients: sour cream, guacamole, re-fried beans, and salsa)
While cooking, you may want to warm up the corn chips by placing in a 325 oven for 10 minutes
Spoon the 7 layer dip ensuring you get all the layers for each taco bite
Sprinkle with cheese
