Whipped Shortbread Cookies

I am so excited to share this recipe because it is one of my favourite holiday cookie staples. These shortbread cookies literally melt in your mouth thanks to the use of powdered sugar and whipping the batter until light and airy. They are delicate and light, so please be mindful when transporting them because they can crumble easily.

You will need:

1 cup butter, room temperature

1 1/2 cup flour

1/2 cup powdered sugar

chocolate chips (optional)

Preheat oven to 350 degrees fahrenheit

  1. Place butter in a mixing bowl and mix on high speed for approx. 5 minutes

  2. Add sugar and whip for an additional 5 minutes.

  1. Add flour and whip for another 5 minutes so that the entire batter has been whipped for approx. 15 minutes. Do not cut corners. The success of this recipe rests on the long whipping time.

  1. Spoon batter onto cookie sheets. These cookies spread quite a bit so I like to use a mini cookie scoop to keep the shape as uniform as possible. Also, place cookies at least 2 inches apart.

  1. Optional. Place chocolate chips in the centre of each cookie.

  2. Bake for 12-15 minutes or until cookies turn a light brown around the edges.
